The easiest, best cake (that no one will believe you made)

We did Sadie’s birthday really easy this year. Just family and some close friends (and it was still like, 30 people!) and kept it low key on food, decorations and the like. I had stressed myself into a tizzy the last two years around her birthday and I didn’t have the time or energy for that this year. We also wanted to keep the cost down too since we figure next year we may have to start inviting little friends of hers from school or wherever to her birthday parties.

When it came to dessert, well, none of us are really into cake. And I saw this Swiss Roll Cake on Pinterest and OMG it looked so easy, INEXPENSIVE


Recipe from Confessions of a Cookbook Queen

– 18 Swiss Roll cakes (9 two packs), unwrapped and sliced into 1/4-1/3 inch slices (I used a few more than 18 due to my pan being bigger)
– 8 oz cream cheese, softened to room temperature
– 1/2 cup powdered sugar
– 1 1/2 cups heavy whipping cream, cold
– 12 chocolate sandwich cookies

– Line a 9 inch springform pan with plastic wrap. Set aside.
– Place a metal mixing bowl and your mixer whisk attachment in the freezer.
– Line bottom and sides of springform pan with Swiss Roll slices.
– In a medium bowl, beat cream cheese and powdered sugar with your hand mixer, on medium speed until smooth and creamy. Set aside.
– Remove chilled bowl and whisk attachment from freezer. Pour heavy cream in bowl and beat with the chilled whisk attachment with the mixer on high speed, until a stiff whipped cream forms. Working with 1/3 of the whipped cream at a time, gently fold into the cream cheese mixture until smooth and blended. Once all the whipped cream has been added and the filling is smooth, fold in cookie pieces until combined.
– Spoon filling over the top and spread evenly. Top with remaining Swiss Roll slices to cover. Cover pan with plastic wrap or foil and refrigerate for at least several hours.
– To serve, turn pan out onto a cake plate and remove pan and wrap.


I was a little nervous about how it would turn out and if our families would like it. Well, I think this picture pretty much sums up how it was received!


People kept asking me if I made it or if it came from a bakery. 🙂 And also couldn’t believe that it was inexpensive to make! I call that a success!
