Is it a brownie? Is it a cupcake? Who cares, its delicious!

Finding a recipe you squirreled away awhile ago is like finding a surprise gift. At least it is to me! Most of the recipes I print or clip are kept in binders, but I have some in a tiny recipe box I got at my bridal shower. I forget about this recipe box ALL THE TIME. One day I spotted it on my kitchen windowsill and took a peek inside and found some awesome recipes that I had clipped and forgotten about. Like Brownie Cupcakes.


It’s basically a brownie baked in a muffin tin. And it’s delicious! You don’t have to cut a piece of brownie because they’re already portioned out! YAYY!!

(They’re also really good!)

– 12 ounces Semi-Sweet Chocolate Baking Bar
– 1 1/4 cups (2 1/2 sticks) butter, sliced
– 2 cups granulated sugar
– 6 large eggs
– 1 1/2 cups all-purpose flour
– 1 cup chopped walnuts

1. Preheat oven to 325° F. Line two 12-cup muffin pans with liners.

2. Melt chocolate and butter in double boiler, stirring occasionally. Beat sugar and eggs in large mixer bowl on high for about 3 minutes or until mixture falls from beaters in ribbons. With mixer at medium speed, add melted chocolate mixture to egg mixture. Gradually add flour. Stir in nuts. Scoop 1/3 cup batter into each cupcake liner, filling 3/4 full.

3. Bake for 25 to 30 minutes or until toothpick inserted in centers comes out with loose crumbs attached. Cool in pans for 5 minutes; remove to wire racks to cool completely.


(They also freeze pretty well!)
