On to the meals!!
First recipe of the week is Picky Palate’s Cumin, Lime and Garlic Grilled Chicken – cumin, lime and garlic are ALL good things in my book. I’m going to pair it with some delicious Near East couscous my favorite couscous brand!) And tip here – set up another batch of the chicken with marinade in a ziplock baggie and freeze it -you’ll have an easy, quick meal ready to go next time you’re in a pinch for dinner!
While going through recipes, I realized that I haven’t used my slow cooker in awhile. Blasphemy! Time to remedy that with Slow Cooker Shredded Korean Beef Tacos from A Year of Slow Cooking. I can’t wait to see how this one comes out.
Last, but certainly not least on the weekly menu is Baked Panzanella Caprese. This recipe is from Iowa Girl Eats, who adapted it from Giada De Laurentiis. This just sounds indulgent and decadent and OH SO GOOD. It’s too bad our tomatoes aren’t ripe yet, but I can definitely use the basil from our garden.
Do you have a garden that you can pull herb or veggies from? We’ve only got tomatoes, basil and scallions this year, but we’re going to put in some planter boxes soon and hopefully have a BOUNTY of stuff to cook with.
