Menu Monday
Now that my birthday celebration week is over, I’m actually looking forward to cooking up some meals this week – I don’t think I cooked anything at all last week! Which I guess isn’t a bad thing, considering how hot it was. We’re cooking:

Orzo with Parmesan and Basil – pinned this. Cant wait to make it with fresh basil from our garden.

Oatmeal-Crusted Chicken Tenders. I made this for the first time in March, and it was OUTSTANDING. I remember Dave came home late for dinner that night and I was RAVING to him about how this was the best chicken recipe EVER. He definitely agreed with me after having his first bite, and we vowed to never fry chicken again – this was so much better!

And last we’re finishing off a freezer meal of Chicken Breasts Stuffed with Pesto Butter. I finally found the recipe online! I know, it’s two chicken meals in the same week, but at least it’s not two red meat meals in a row. Right? We’re going to make a side of pasta with garlic and olive oil with this – meaning it will NOT be a healthy meal at all.

I also baked for the first time in our house, and I can’t wait to share the recipes with you!

  2. The recipes you’ve linked to sound lovely. ๐Ÿ™‚ One of my favorites is basically a chicken parm without the sauce. You pound out the chicken, coat with breadcrumbs and cheese, then sautee until cooked through in oil. It’s SO GOOD.

    Also, how did I just notice that you’ve got a photo of an Unofficial HP Cookbook. Seriously!?
