Menu Monday
Been awhile since my last Menu Monday update!! Tis what happens when your weeks are crazy and you’re barely home! To be honest, Dave did make two meals last week while I contributed nothing – and one of them was AMAZING – Rachael Ray strikes again with her Fruited Chicken Curry. I can’t find the recipe online, but I did find it on this blog. I’m randomly picky about what I’ll eat as leftovers, and Dave had to fight to make sure he got some, because I was hoovering this into my face at every opportunity. Delicious. I’ve been eating like crap lately, and Dave is trying to eat better in general. That being said, I found this recipe thanks to Renee’s “Healthy Eating” pin board and am excited for my first foray into quinoa with Quinoa and Avocado Salad with Lemon Tahini Dressing. Just sounds light and delicious, doesn’t it?

Keeping it on the light side of things, we’re also making Buffalo Wing Turkey Lettuce Wraps, from The Girl Who Ate Everything. I’ll (sadly) be forgoing the blue cheese (only 2 months until I can eat it again!) but it still sounds delicious. Maybe a nugget will slip past my mouth accidentally… I love recipes like this, because we already have a lot of the ingredients in the house!

And, because we have some sauce left in the freezer, and I’m a sucker for it – Penne alla Vodka.  I’m drooling just thinking about it.  And it’s the last freezer batch – so time to make more! I’m going to stockpile the sauce for when Baby Bean is here… among a bunch of other freezer meals!  I need to get cracking on that… now!

    • Clearly I’m not that good at it since it seems like every other week I don’t bother doing it!! I just keep reminding myself that the baby will be here soon – so I need to get cracking!

  2. You forgot the weekend food. Saturday: Butterbeer, cupcakes. Sunday: snitches and Bertie Bott’s Every Flavor Motherf’in Beans. BOOYAH.
