Menu Monday!

This week as we’re celebrating, we’re making:

Pita Bread Salad – another Rachael Ray recipe, we’ve made this one before (and love it) but this time I’m omitting the mint.  I’ve realized I’m not usually a big fan of mint in certain foods, so we’ll leave this out and see how it goes. Another tip – leave the pita chips on the side if you’re planning on leftovers, because otherwise they wind up all soggy.

Jamie Oliver’s Crunchy Garlic Chicken – this recipe is super simple, but comes out amazing.  The cracker coating doesn’t produce a lot when we make it, but it’s still good.  Will probably serve with a side of  vegetables.

and a new recipe for us…

Fork-Tender Pot Roast in the slow cooker.  This is from my Better Homes & Garden’s Ultimate Slow Cooker book, which I love – but I can’t find the recipe online! 🙁  If it turns out well, I’ll be sure to share.

Also, it must be noted that we created the SNACKADIUM for our Super Bowl party.  Pictures will be shared.  Oh yes.  They will be.

  1. I’ve really been wanting to try that chicken recipe, so I’m glad to hear it’s simple. I might have to throw it into our rotation, too.

    • The great thing about Jamie Oliver’s recipes, besides that they’re pretty healthy, is that they are easy. Dave has made a lot of Indian food from the cookbook, we love it!

    i have a balsamic pulled pork recipe from better homes & gardens that is to die for so i bet the fork tender one is incredible as well!
