It’s that time once again!!

Menu Monday!

This week on the Lacey, Dave and baby menu, we have:

Tacos! – Nothin’ fancy about tacos – but we love them! And also haven’t had them in awhile, and already have the taco shells and seasoning in the house. FYI – stop buying taco seasoning packets NOW! We made our own seasoning using this recipe probably a year ago, and we’re still not done with it!  Can’t go wrong!

Yogurt-Marinated Chicken with Asparagus and Watercress – we just ate at an AMAZING Turkish restaurant on Friday, and loved the yogurt sauce that came with the dishes.  While this isn’t nearly the same, it’s got the yogurt component I was looking for.  And if I can’t find watercress, I’ll substitute arugula.  Mmmm arugula.  Thanks to Rachael Ray for the recipe – even though I loathe her voice and her penchant for making up words (aka stoup), I’ll give it to her for the recipes.

Sweet Chili Lime Tofu with Wok Steamed Collards and Quinoa – OH.YEAH. I pinned this recipe awhile ago courtesy of my cousin Tyler, and can’t wait to make it. I’ve been wanted to learn how to cook with tofu for awhile, and this sounds delicious.  Dave is even excited about it.  If I cant get collard greens I’ll sub in spinach, and I will probably use brown rice instead of quinoa.  Will also omit the oyster sauce, since Dave doesn’t like anything fish related.  Even as remotely fish related as oyster sauce.  I’m excited to see how it turns out.

 

What have you got cooking?  I’ve noticed that we rarely cook more than 3 meals a week – either we have enough leftovers to tide us over for the other days  that we don’t cook, or one or both of us aren’t home for dinner.  Wondering how this will change when the baby is here – will we cook more, or less?

  1. Finding watercress is hit-or-miss at my grocery store. Arugula is a good substitute, or sometimes I use frisee. Doesn’t matter — it all sounds delicious!
