Menu Monday!! (It’s baaaaack!)

I love that I said I was going to bring back Menu Monday as a regular feature on the blog, and that was back in OCTOBER. BIG, FAT, FAIL.

Menu Monday!

Well it’s back now! With… only three recipes because it’s already Monday night, and I’m not home Wednesday night. Wah wahh. Anyway, we’ll be making…

Roasted Tomato Basil Soup – from Annie’s Eats, this is THE BEST tomato soup.  Ever.  For realz.  Especially when you forget how much red pepper flakes you’ve already put in the pot, and then add more, and then your mouth is on fire!  (Dave was thrilled… I was dousing my mouth with water… but still enjoyed!)  This will be consumed with gooey grilled cheese sandwiches.  Mmmmm.

Slow-Cooker Vegetable Curry – we haven’t made this one yet, but I’m eager to try it!!  I have a feeling it may be a recipe that turns out OK the first time we have it, and will need tweaking to make it AWESOME.  This’ll be served over brown rice. (Yes, in this case it is OK to put the food on top of the rice.  Yes, I’m aware this still makes me weird.)

Moroccan Spiced Baked Chicken – this is Dave’s meal for the week – he’s made it before and it’s delicious.  And it’s baked in our toaster oven!  Awesome, right?  The recipe actually came with our toaster oven, and can be found on the Cuisinart website.  We’ll be having this with Israeli couscous from Fairway.

  3. I’m usually on top of my weekly meal planning on Monday nights. All I know for this week is homemade Wedge salad. I’m really pumped about it though. : )
