Buffalo Chicken Sandwiches Mmmmm

Does your significant other bug you when you don’t post, or is it just mine?  😉  Beyond reminding me that I hadn’t posted recently, the other night Dave also said, “You haven’t posted any recipes in awhile”.  And that was true.  I hadn’t posted a recipe in…. well who knows how long.  It’s weird, I am cooking just as much as I did in past years, but I guess I’m not as good at sharing as I used to be. Well, here’s a recipe for you!! (A DELICIOUS one, at that.) I’ve made this a few times, and it’s one of the easiest slow cooker recipes, and quite possibly one of the most tasty. Buffalo Chicken Sandwiches. MmmmmmMmmmmmmmMmmmM.

Buffalo Chicken sandwiches (Slow Cooker)

I first got this recipe from D.A.R., who got it from Jenn.  The recipe is so easy, you’d have to try your best to mess it up.  Our friend Andy was actually over one time I made it, and laughed when I showed him the recipe… there are barely any measurements!  Scratch that, there are no measurements.  😉

  • 4 chicken breasts
  • 1 bottle wing sauce (any kind you like!)
  • 1 packet ranch dressing mix
  • Butter…because everything is better with butter (truth! – I throw in a tablespoon or two)
  • Whole wheat buns
  • Blue cheese dressing/crumbles (this was my addition to the recipe, I add it to the bun)
  • Hot sauce (optional)

Throw ranch packet, chicken, and about 1/3 of the bottle of wing sauce into the crockpot. Cook on low 6-8 hours (until it shreds easily with a fork). Shred the chicken and put it into a bowl. Top with more wing sauce and a couple of tablespoons of butter. Add hot sauce if you want it hot! hot! HOT!

Toast your buns (hee hee) and slather with a delicious amount of blue cheese dressing/crumbles.

Take your first bite, and enjoy the flavor-splosion!
