It’s Monday again!!!

How was your weekend everyone?  I feel like booze was a-plenty in mine, between celebrating Arielle‘s birthday (WOOO!) and also heading out to the Trailer Park Lounge (one of my fave places) to give two coworkers a send off as they’re leaving the company (sad.)  However Sunday was a well needed laaaaaazy day – Dave and I didn’t leave the house until after 2pm!  (And didn’t get off the couch until about 1.)  We only left to run some errands – including our weekly grocery shopping, and somehow we only spent about $50!  Crazy what happens when you actually stick to your shopping list!!!

Dave and I are splitting the menu right down the middle this week.  I’m making:

CrockPot French Onion Soup from A Year of Slow Cooking. SO excited for this one – I love French Onion Soup.

– Epicurious.com’s Salmon with Hoisin, Orange & Bok Choy. Yet another attempt for Dave to eat fish and somewhat enjoy it. (We try to get him to eat it for his cholesterol.)

And Dave is making:
Spaghetti w/ Meatballs – homemade sauce and homemade meatballs.  Yummmm.

Chicken in Curry Simmer Sauce, served with Punjab Eggplant and Basmati Rice.  A Dave special, a la Trader Joe’s.  ๐Ÿ™‚  TJoe’s Indian sauces and sides are REALLY good.  I’m really picky about Indian food, but everything we’ve tried from TJoe’s has been great. 

Also, for a work Halloween party, I think I’ll be making S’mores Bars from Annie’s Eats.  I LOVE pretty much anything s’mores, and can’t wait to crank these bad boys out.  Mmmmm.  S’mores…

    I'm making soup stock now so that I can make vegetable beef soup later — half for us and half for a friend who had a baby, so I said I'd fix dinner tonight.

    God I miss Trailer Park. Tater tots when I'm in town?! I promise to not be so hungover I'm almost laying on the floor this time.

    i've been loving anything with butternut squash. last night i made spaetzle with roasted squash, caramelized onions, sauteed romaine and crispy turkey bacon. yum!!!

    Those all look super tasty. I am curious to hear about the salmon dish. I just cooked with fish too and I'm curious to expand a bit ๐Ÿ™‚ And bok choy is so tasty

    i try to do this every week, and homemade pizza is always on my list. it's so simple and easy.
