Finger Lickin’ Good – Cupcakes!

I usually don’t trust Rachael Ray when it comes to dessert recipes. She’s very honest in stating that she isn’t a baker – in her magazine, most of her dessert recipes are attributed to someone else. And, I already failed once when trying to make her Frozen Mojito Cake-Tails. But when I saw Caramel Apple Cupcakes in this month’s magazine (yes, I subscribe, leave me alone… it’s better than having to listen to her voice on her show!), I knew I had to make them.

Caramel Apple Cupcakes
Recipe from Rachael Ray Magazine

Ingredients:
* 1 1/4 cups flour
* 2 teaspoons baking powder
* 1/2 teaspoon ground cinnamon
* 1/2 teaspoon salt
* 2 eggs, at room temperature
* 1/2 cup packed light brown sugar
* 1/2 cup granulated sugar
* 1/2 cup vegetable oil
* 2 teaspoons pure vanilla extract
* 2 rome apples (about 1 pound), peeled and shredded (I used 3 mackintosh apples since I couldn’t find rome, and they worked fine)
* 1 1/2 cups chewy caramel candies
* 1 tablespoon heavy cream

Directions
1. Arrange a rack in the upper third of the oven and preheat to 350Β°. Line a cupcake pan with baking liners. In a large bowl, whisk together the flour, baking powder, cinnamon and salt.

2. In a medium bowl, whisk together the eggs, brown sugar and granulated sugar until smooth. Whisk in the oil and vanilla. Stir into the flour mixture until just combined; stir in the apples. Spoon the batter into the prepared pan until almost full. Bake until golden and a toothpick inserted in the center comes out dry, 25 to 30 minutes. Transfer to a rack to cool completely.

3. In a small, microwavable bowl, combine the caramels and cream. Microwave for 1 minute at medium power, then stir; repeat in 30-second intervals until melted and smooth. Let cool. Spread the frosting generously on the cooled cupcakes.

The batter almost perfectly makes 12 cupcakes (I had a little, tiny drop of the batter left over that I couldn’t squeeze into a muffin tin. They baked just right in 25 minutes, but I had a bit of a problem with the “frosting”. I don’t think you can really call it “frosting” since it’s just melted caramels with a splash of heavy cream. It’s basically just caramel topping. I also think I spread it on the cupcakes too soon, since they were still a bit warm, but I was afraid of the caramel hardening after I had melted it, since I had it sitting out there. And then I didn’t refrigerate overnight, thinking that the cupcakes would be fine in their little covered environment. The next morning topping was all melty, and everything was extremely sticky, down to the bottom of the cupcake itself!! I guess next time I’ll wait till they’re completely cool to frost, like suggested, and will make the “frosting” then, and not as I’m waiting for the cupcakes to cool. I’ll also refrigerate right afterwards, maybe that’ll help from the oozing of the caramel.

Regardless, these babies were DELICIOUS.  I brought them to Super Awesome Book Club, and everyone loved them.  A few of us were even sucking the frosting from the cupcake liners!!!  So yes, sticky as hell, but very yummy.

Jackie tweeted that she was making the cupcakes on Sunday, and she mentioned that hers were more of a muffin consistency.  I do have to agree, I think the shredded apples add texture that most cupcakes don’t have.  But, they were definitely not as dense as a muffin. 

Over all?  WIN.  Major win.  Dave was very happy that there were leftovers, because I wouldn’t let him have any when they were first made.  πŸ™‚  AND, at the same time because I am super awesome at multitasking (sometimes) – I made 2 loaves of Apple Bread!!  The first loaf is pretty much gone, but I stored the second in the freezer to have at a later date!!

  3. I will admit that I receive her magazine too! My aunt got me a subscription as a gift a few years ago, and keeps on renewing it. I've tried a cookie recipe of hers and it was a total fail. I do want to try these cupcakes though!
