Meal Planning Do-Over!

Last week’s meal planning was a complete and utter bust! Dave was playing bass in a local college show all week, so really, what was the point of cooking just for me? (AKA – I’m LAZY.) This week is slightly less crazy, so we’re having a re-do!!

From last week’s menu:

1. Chicken and Asparagus in White Wine Sauce (originally seen on Kaitlin‘s blog) with Couscous!

2. Sweet Potato Chili (leftovers from the freezer)

3. Rachael Ray’s Sauteed Salmon with Spicy Fresh Mango-Pineapple Chutney – from 365: No Repeats

And we are adding:

4. D.A.R.’s Penne Alla Vodka (YUMMMM)

5. And leftovers!!

I figure we can handle this, since the only major thing on the agenda is meeting with our DJ tomorrow, and I’m staying in the city after that for a work event on Wednesday. (12 more days till the wedding!)

    I've been loving rice lately, which is weird for me because I hated rice as a kid!

    I get 6 tomatos, half a red an yellow bell pepper, some seasonings (differ depending on my mood), Squash, and mushrooms. I dice them all up and simmer them together until they make a nice tomato sauce (add sugar to cut the acidity if it bothers you). Then I throw some tempeh into a frying pan and brown the cubes. Once brown I throw the cubes into the sauce and fluff my rice.

    Serve the sauce with tempeh over rice and it's pretty much the perfect, not too heavy but very filling meal.

    I've also been baking lately but that's not good for the waistline! ๐Ÿ™‚

  4. i made a rosemary garlic chicken that I'm posting this week. That chicken asparagus recipe might be on my list coming up!
