February Semi-Fail?

I can’t believe February is over. That means that our wedding is in 20 DAYS!!!!! That’s less than 3 weeks! AHHHHHHHHH!!

Well, with the end of February, we also have to tally up my progress in recipe learning and gym going.

Gym visits = 1 big fat FAIL. I went once. On February 1. I really have no excuse for this, except being busier than I was in January. And a lot more tired. Which is probably a result of not going to the gym. (It’s a vicious chain of events I tell you. Vicious!) March = GOING TO THE GYM!!!!!!!!! (More than once, at least.)

At least I was more successful in my quest to learn 50 recipes in a year. In the month of February, I learned 6 more recipes, bringing the grand total up to 13! I made:

1. Sweet Potato Chili

2. Grapefruit & Avocado with Cilantro Cream

3. Cilantro Lime Rice

4. CrockPot Shredded Chicken Tacos

5. Rachael Ray’s 5 Ingredient Tortellini Soup (was really good, except I had no “soup” left after cooking! Next time I’d cook the tortellini halfway through in water first, and then add to the chicken stock for the rest of the time.)

6. CrockPot Asian Chicken Wings

Woo hoo!! There are some new recipes that were made this month that I’m not counting, because Dave was the sole cook in the kitchen. This week coming up is super busy for Dave – he’s playing in a Vaudeville showcase at a local college almost every night, so we’re scaling back a little bit. (We also have a lot of leftovers from this week!) The menu is:

1. Chicken and Asparagus in White Wine Sauce (originally seen on Kaitlin‘s blog) with Couscous!

2. Sweet Potato Chili (leftovers from the freezer)

3. Rachael Ray’s Sauteed Salmon with Spicy Fresh Mango-Pineapple Chutney – from 365: No Repeats

4. Leftovers

5. and more Leftovers!

I have to mention that us having salmon on the menu is HUGE. Dave doesn’t eat fish. At all. Never. No fish. I’ll let that sink in. No really, NO FISH! But, he did read that salmon is one of the best heart healthy foods, so he’s willing to give it a shot, hoping that any recipe we make will heavily disguise the taste for him. I’ll keep you posted on how that one goes!

I also managed to knock something off my NYC-to-See list! WOO!! Yesterday was my Co-MOH Allison’s birthday, and we took her to Beauty Bar for some Mani’s and Martini’s to start the night off right! (It’s so cute!) We wound up at Carnival NYC, which was SO MUCH FUN, albeit slightly expensive! Booze, games, burlesque performers, and a dunk tank… what more could you want?

So, I’ll mark down February as a semi fail…damn the gym!!

  8. as personal salmon lover, let me know if you want an easy recipe. makes the salmon sweet and its super easy. also stay away from salmon stakes, a) they tend to have a lot of bones and b) they are not the best cut of fish you can get. ๐Ÿ™‚

    I eat wild salmon just about everyday for one of the same reasons as Dave. I found it very reasonable in the frozen section. I thought I'd share with you how I cook it. I like to coat it with olive oil seasoned with Habanero Tabasco before cooking, and serve it on a bun with True Lemon(crystalized lemon). I love it like this! The only problem is that if you cook it on top of the stove all the spicey seasoning will really make you cough so I grill it in the microwave.
