Sunday Fat Sunday

While Arielle is having Sunday Bloody Sunday over at her blog, I’m over here having Sunday Fat Sunday. I’ve seriously eaten my way through today.

- For breakfast made Apple Yogurt Pancakes, using more apples out of the abundance living in our fridge.

- Pancakes were served with bacon and Raisin Swirl toast. (Delicious)

- Consumed at least 2 Pickle Paks

- Multiple handfuls of pumpkin seeds.

- Frozen grapes

- Sugar snap peas

- Strongbow Cider

- Pasta shells w/ mixed vegetables for dinner.

- Edy’s Nestle Drumstick ice cream (Amazing)

I guess in actuality most of it was healthy snacking, but from sitting on my ass all day I feel gluttonous. Blech.

Recipe for Apple Yogurt Pancakes

INGREDIENTS
2 eggs
1 2/3 cups milk
1 (8 ounce) container plain yogurt (I used vanilla flavored)
1/4 cup vegetable oil
2 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 1/2 teaspoons ground cinnamon
1 apple – peeled, cored and diced

In a large bowl, stir together the eggs, milk, yogurt and oil until well blended. Combine the flour, baking powder, baking soda, salt and cinnamon, stir into the milk mixture until smooth. Fold in chopped apple.

Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each cake. Cook until bubbles form in the cakes and the bottoms are golden brown. Flip and cook the other side. Serve warm with syrup or jam.

Strongbow? Really? You know is a bit of a homeless person drink in Britain. Do you have Magners’ there? Its lovely!

However, those pancakes sound and look amazing. I might be making me some of them!

I looked at the website and I’m still not sure what the crap a Pickle Pak is. Is it..just a regular pickle?

Oooh, apple pancakes. I’m still recovering from my attempt to make apple cupcakes and apple pie earlier this week (captured in live blog!), but I do have a ton of apples left…
